Your List of Ingredients

-(1) 16 oz Pack of Bacon

-(1) lb Hot Breakfast Sausage

-(1) Medium White Onion (Approximately 1 cup)

-(1) Large Yellow Pepper (Any bell pepper will work. We just like the yellow for color.)

-(1) 55 oz cans of Bush's Original Baked Beans

-(1) 15 oz can Pinto Beans

-(1) 21 oz can Apple Pie Filling

-(1) 8 oz. Rotel Tomatoes and Green Chilies

-(1) 4 oz. of water (Half the Rotel Can)

-(1/4) Cup Brown Sugar

-(1/4) Cup Molasses

-(2) Tablespoons FH House Seasoning

-(1) Tablespoon Black Pepper

-(2) Tablespoons Canola Oil

-(1) Tablespoon Minced Garlic

-(1) Tbsp Dried Mustard

Step 1: Preparation

If competition barbecue has taught us anything, it's the importance of preparing everything before you start cooking. So, don't overlook this fundamental step known as "Mise En Place," a French culinary term that means "Everything in its place."

1. Cut bacon into ¼” wide lardons (Strips).

2. Dice onion and peppers into ¼” pieces.

3. Open all the cans and drain the liquid from the baked beans and the pinto beans. Don't worry....we will add back our own flavor.

4. Depending on the apple pie filling that you purchased you might need to cut the apples down to a smaller size. We take a knife and cut them in the can.

Step 2: Cooking the Base Ingredients

Once you have completed your prep work, it's time to start cooking. We cook our beans in two main steps. First, we cook the base ingredients in a Dutch oven, large sauté pan, or skillet. Due to the numerous ingredients, we prefer using a Dutch oven. Once you have cooked the base ingredients, you can either finish cooking the beans in the Dutch oven or transfer them to a crockpot, which is our preferred method. Here are the steps for cooking the base ingredients:

  1. Heat (2) tablespoons of canola oil in over medium-low heat.

  2. Add the lardons of bacon and cook for approximately 10 minutes until they start to render and turn brown.

  3. Combine the breakfast sausage with the bacon and cook for an another 10 minutes, ensuring the breakfast sausage is thoroughly cooked and the bacon becomes crispy.

  4. Add the onion and green peppers with the bacon and continue to cook for another 10 minutes until the onions become translucent.

  5. Add the minced garlic and cook for 2-3 minutes, stirring well to prevent the garlic from burning.

  6. Pour the Rotel Tomatoes in with the bacon, onions, peppers, and garlic, along with the 4 oz of water. Let the mixture simmer for 15 minutes. As soon as you add the Rotel Tomatoes and water scrape the bottom of the pan with a spatula to release any fond (the flavorful bits stuck to the pan).

  7. Once the tomatoes have simmered for 15 minutes, remove from the heat and add the apple pie filling, molasses, brown sugar, House Seasoning, black pepper and dried mustard. Be sure to continue to stir the mixture for a few minutes to ensure the brown sugar and molasses do not burn.

Step 3: Simmer and Serve

Once you've cooked the base ingredients in your dutch oven, it's time to complete the dish. There are various ways to simmer your beans, but our preference is using a crockpot. The crockpot enables you to focus on other dishes while the beans develop into a culinary masterpiece. Alternatively, you can keep cooking the beans in a Dutch oven or put them in an aluminum pan and smoke them for an added layer of flavor. Here are the simple next steps:

  1. Add a liner to your crock pot for easy clean-up.

  2. Place the base ingredient mixture, Bush's baked beans, and pinto beans in the crock pot and turn it on medium heat.

  3. Let the beans simmer for 3 - 4 hours until they start to bubble. We normally stir the beans about every 30 minutes.

Feel free to cook the base ingredients a day in advance. The flavors tend to meld together and the beans will taste even better after the base ingredients have had a chance to cool overnight. This is one of the reasons we appreciate using the crock pot; it offers the advantage of mixing everything together the night before and storing the beans in the refrigerator. That way all you have to do the next day is pull the beans out of the refrigerator and turn on the crockpot while you cook your other dishes.
